It would require a huge workload because MIDI are closer to 180 instruments, besides having a keyboard is much nicer visually than not doing nothing in some instruments (like a flute).
It's much simpler and cheaper to make having a single keyboard for all the instruments.

Works really well! Are you going to keep working on it? It'd be nice to have the dogs play the instruments instead of having keyboards everywhere.
